200ml recently pressed lemon juice
500g fine sugar

150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

Making the Syrup: Put the listed components in a pan, heat until it reaches a simmer, mixing so the sugar melts. After that, turn off the heat and leave to cool down completely. Pour into a clean bottle, seal and store in the refrigerator, it can be stored for up to one month.

Preparing the Premix: Mix all the liquids into one big jug, let it rest for 60 minutes, then strain preferably using muslin, making it fully clarified.

To serve: Add 85ml from the premix into your stirring glass packed with ice, and agitate gently for about 60 seconds to chill. Filter to a frosted cocktail glass or a similar vessel, garnish with a few cranberries and complete it by giving it a light spray of mandarin oil over the top.
